Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Stopped on a long road trip based on yelp reviews. Enchiladas were excellent. Staff very friendly and accommodating. Excellent choice of salsas on a salsa bar. Well worth the stop!

I love tacos. But I love taco shops with taco bars even more! Super Tortas has a nice selection of fixings for you to make your tacos your own. I opted for some pickled red onions, lime, tomatoes and cilantro to top my tacos al pastor... it was divine. I had the guacamole too (needed a little more salt) but it was still good. It was overall a satisfying meal and a bargain too!

Taco al Pastor...means it's always time to get out the litmus....however this one hasn't disappointed three times in a row. The pork has texture, color and depth but the kicker is the "condiment bar" Load up the salsas, sauces and pickled onions and each taco is what you want it to be Zero plate, stem, flatware and Liga Mx on the Telly just make it taste better The beans and rice....they're nothing to write home about

If you're looking for a place with good Mexican food, you've found it! There tortas are to die for. I had the carnitas torta and it was fantastic! The flavor was so rich, The rice and beans are definitely homemade! This is at least the best Mexican food place in Rock Springs!

I've tried a few Torta (Mexican Panini) places in Denver so I ordered tacos instead. The Asada and Al Pastor tacos are legit! Similar to the street tacos from Mexico. It comes plain but they have a salsa bar with different spices and lime. We also tried the Hawaiian Torta and it wasn't as good as the ones in Denver.

I recently moved to the area and this place is out of place in that it is different than the rest of this one horse town. The food is great and not your Taco Time, Taco Bell, Taco Johns style of food. If you understand food, you will like this place and get some respite from the typical local crappy food.

Stopped here while traveling. I live in one of the meccas of high quality Mexican food (Bay Area). This is as good as anything I have eaten at home. We had a torta and a burrito. EAT HERE! It's so good. (And the margarita is 2 thumbs up.)

Very flavorful carnitas. See pic. No frills but a great choice when "taco time" and "KFC" are right next door. Do the right thing, your tongue and stomach will thank you!

Meh. I think this place could be better. I have tried the asada burrito which is pretty simple in concept but it was bland and I didn't finish it. The salsa bar was nice but the green avocado salsa tasted as if it was left out. Staff was friendly and they serve menudo on the weekends which is nice.

I came here based on the reviews I found on yelp. The food quality was so bad I won't be back to give them a second chance unfortunately.

Awful. Uncooked corn tortillas, terrible chicken tacos, good margaritas. Salsa bar was empty and the salsas that were there were so hot I couldn't eat them. Cheese dip is from a can. Chips are hard and bitter.

It was ok. Salsa bar was good. If this is the best Mexican in Rock Spring as someone else said, I feel sorry for the people who live there.

Good food, made up fresh to order. Fresh salsa bar with nice variety is a plus too. Don't make the mistake of going to Taco Time next door if you're looking for Mexican style fast food.
